2 lbs Yukon Gold potatoes, thinly sliced

2 cups heavy cream

1 cup whole milk

2 cups shredded Gruyère cheese

1 cup shredded sharp cheddar cheese

4 garlic cloves, minced

1 small onion, finely chopped

1/2 tsp nutmeg (freshly grated, if possible)

Salt and freshly ground black pepper to taste

2 tbsp unsalted butter, for greasing the baking dish

1/2 cup grated Parmesan cheese (for topping)

Fresh thyme or parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with the butter.

    Prepare the Potatoes: Wash and peel the Yukon Gold potatoes. Slice them thinly using a mandoline slicer for even thickness.

      Make the Cream Mixture: In a medium saucepan over medium heat, combine the heavy cream, whole milk, minced garlic, chopped onion, nutmeg, and a good pinch of salt and pepper. Warm the mixture until it's just about to simmer, then remove from heat.

        Layer the Dish: Begin layering the potatoes in the greased baking dish. Start with a layer of potatoes, followed by a sprinkle of Gruyère and cheddar cheese. Continue layering until all the potatoes and cheese are used, finishing with a layer of cheese on top.

          Add Cream: Pour the warmed cream mixture evenly over the layered potatoes, ensuring they are well coated. The liquid should just cover the top of the potatoes.

            Add Toppings: Sprinkle the grated Parmesan cheese generously over the top of the dish.
