Roasted Veggie Hummus Pinwheels

4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 cup roasted bell peppers (red, yellow, or a mix)

1 cup roasted zucchini, sliced

1 cup roasted sweet potato, cubed

1 cup baby spinach

1/2 cup shredded carrots

1/4 cup crumbled feta cheese (optional)

Salt and pepper to taste

Olive oil (for roasting)

Fresh herbs (like basil or parsley) for garnish

Instructions
 

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the vegetables: Chop the bell peppers, zucchini, and sweet potato into even-sized pieces. Toss them in a bowl with a drizzle of olive oil, salt, and pepper. Spread them out on the lined baking sheet.

      Roast the veggies: Roast the vegetables in the preheated oven for 20-25 minutes or until tender and slightly caramelized. Stir them halfway through for even roasting. Remove from the oven and allow them to cool slightly.

        Assemble the pinwheels: Start with one tortilla on a clean surface. Spread about 1/4 cup of hummus evenly across the tortilla, leaving a small border around the edges.

          Layer the fillings: On top of the hummus, add a handful of baby spinach, some of the roasted veggies, shredded carrots, and crumbled feta cheese if using.

            Roll the tortilla: Starting from one edge, tightly roll the tortilla over all the fillings, making sure to keep everything bundled neatly.

              Slice into pinwheels: Using a sharp knife, cut the rolled tortilla into 1-2 inch pieces. Arrange them on a serving platter.

                Garnish and serve: Drizzle a little olive oil over the pinwheels and sprinkle with fresh herbs for added flavor. Serve immediately or store in the refrigerator for later.
