Ingredients

3-4 lbs sirloin tip roast

4 cloves garlic, minced

3 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons olive oil

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon smoked paprika

1 cup beef broth

1 tablespoon Worcestershire sauce

Fresh parsley, for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 450°F (232°C).

Prepare the Marinade: In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, black pepper, onion powder, and smoked paprika until it forms a paste.

Season the Meat: Pat the sirloin tip roast dry with paper towels. Rub the garlic herb mixture all over the roast, making sure to cover all sides evenly. Allow the roast to marinate at room temperature for 30 minutes.

Sear the Roast: Heat a large oven-safe skillet or Dutch oven over medium-high heat. Once hot, sear the roast on all sides for about 4-5 minutes per side until it develops a nice brown crust.

Prepare for Roasting: Once seared, remove the pan from the heat. Add the beef broth and Worcestershire sauce to the skillet, giving it a gentle stir. This will create a base for a flavorful sauce.

Roast in the Oven: Place the skillet in the preheated oven. Roast for about 1 hour, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remember to use a meat thermometer for accuracy.

Rest the Roast: Once done, remove the roast from the oven and transfer it to a cutting board. Tent it loosely with aluminum foil and let it rest for 15-20 minutes. This will help the juices redistribute throughout the meat, resulting in a juicy roast.

Make the Gravy (Optional): While the roast is resting, you can prepare a simple gravy with the drippings in the skillet. Heat the drippings over medium heat, scraping up any browned bits. If desired, you can thicken it with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water). Stir until thickened.

Slice and Serve: After resting, slice the roast against the grain into desired thickness. Serve warm, drizzled with the pan gravy and garnished with fresh parsley if desired.
