Roasted Red Pepper Penne Pasta

12 oz penne pasta

3 large red bell peppers

3 cloves garlic, minced

1 medium onion, diced

1 cup heavy cream (or plant-based alternative)

1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)

2 tablespoons olive oil

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves for garnish

Roast the Peppers: Preheat your oven to 400°F (200°C). Cut the red bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet. Roast in the oven for 25-30 minutes until the skins are charred and blistered. Remove from the oven and cover with foil for about 10 minutes. Once cooled, peel off the skins and set aside.

    Cook the Penne: While the peppers are roasting, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and reserve about 1/2 cup of pasta water.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

        Blend the Sauce: In a blender or food processor, combine the roasted red peppers, sautéed onion and garlic, heavy cream, Parmesan cheese, Italian seasoning, red pepper flakes, salt, and pepper. Blend until smooth and creamy.

          Combine Pasta and Sauce: Pour the roasted red pepper sauce back into the skillet. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency. Add the cooked penne to the skillet and toss well to coat the pasta with the sauce. Heat on low for 2-3 minutes until everything is warmed through.
