1 cup roasted red peppers (jarred or homemade)

8 oz feta cheese, crumbled

2 tablespoons cream cheese, softened

1 tablespoon olive oil

1 tablespoon lemon juice

1 garlic clove, minced

1 teaspoon dried oregano

Salt and black pepper to taste

Fresh parsley or basil for garnish (optional)

Pita chips or vegetable sticks for serving

Instructions
 

If using jarred roasted red peppers, drain them well. If you opt for homemade, roast the peppers until charred, then peel and remove the seeds.

    In a food processor, combine the roasted red peppers, crumbled feta cheese, cream cheese, olive oil, lemon juice, minced garlic, and dried oregano.

      Pulse until the mixture is smooth but still has some texture. Scrape down the sides to ensure all ingredients are mixed well.

        Taste and season with salt and black pepper as desired. Blend again briefly to combine.

          Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.

            Before serving, garnish with fresh parsley or basil if desired. Serve with pita chips or vegetable sticks for dipping.
