Roasted Garlic Tomato Lattice Pie

For the crust:

2 ½ cups all-purpose flour

1 tsp salt

1 tsp sugar

1 cup unsalted butter, chilled and diced

6-8 tbsp ice water

For the filling:

4 cups ripe tomatoes, cored and sliced

6 garlic cloves, roasted

1 cup mozzarella cheese, shredded

½ cup fresh basil leaves, chopped

2 tbsp balsamic vinegar

1 tsp olive oil

Salt and black pepper, to taste

1 tbsp fresh thyme, chopped

1 egg, beaten (for egg wash)

Instructions
 

Make the crust:

    - In a large mixing bowl, whisk together the flour, salt, and sugar.

      - Add the chilled, diced butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

        - Stir in the ice water, a tablespoon at a time, until the dough begins to come together.

          - Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

            Prepare the filling:

              - Preheat your oven to 400°F (200°C).

                - Slice the tomatoes and place them in a colander to drain excess moisture for about 15 minutes.

                  - In a bowl, mash the roasted garlic cloves, then mix in the drained tomato slices, mozzarella cheese, basil, balsamic vinegar, olive oil, salt, black pepper, and thyme. Set aside.

                    Roll out the dough:

                      - On a floured surface, roll out one disk of dough into a 12-inch circle and carefully fit it into a 9-inch pie dish.

                        - Roll out the second disk of dough and cut it into even strips for the lattice top.

                          Assemble the pie:

                            - Pour the tomato filling into the prepared pie crust, spreading it evenly.

                              - Create a lattice pattern with the dough strips by laying them over the filling in a crisscross manner.

                                - Trim any excess dough hanging over the edge and crimp it to seal. Brush the lattice crust with the beaten egg for a golden finish.

                                  Bake the pie:

                                    - Bake in the preheated oven for 35-40 minutes, until the crust is golden brown and the filling is bubbling.

                                      - Allow it to cool for 10-15 minutes before slicing.
