Roasted Garlic Mashed Sweet Potatoes

2 large sweet potatoes, peeled and cubed

1 head of garlic

2 tablespoons olive oil

½ cup milk (or plant-based alternative)

4 tablespoons unsalted butter (or vegan butter)

Salt and pepper, to taste

1 teaspoon ground cinnamon (optional)

Fresh chives or parsley for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle 1 tablespoon of olive oil over the garlic head, wrap it in foil, and roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized.

    Prepare the Sweet Potatoes: While the garlic is roasting, place the cubed sweet potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce to simmer and cook until the sweet potatoes are tender, about 15-20 minutes. Drain well.

      Combine Ingredients: In a large mixing bowl, add the drained sweet potatoes. Squeeze the roasted garlic cloves out of their skins and into the bowl.
