2 pounds of Yukon Gold potatoes, peeled and cubed

1 head of garlic

1 tablespoon olive oil

½ cup unsalted butter, at room temperature

1 cup whole milk (or heavy cream for extra richness)

Salt and pepper to taste

Fresh chives or parsley, finely chopped (for garnish)

Prep the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast in the oven for about 30-35 minutes until soft and caramelized. Let it cool, then squeeze the garlic cloves out of their skins.

    Boil the Potatoes: In a large pot, add the cubed Yukon Gold potatoes and cover them with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer and cook for about 15-20 minutes, or until fork-tender.
