Ingredients

1 cup roasted garlic hummus (store-bought or homemade)

4 large whole wheat or spinach wraps

1 medium cucumber, thinly sliced

1 bell pepper (any color), sliced into strips

1 cup baby spinach or mixed greens

1/2 cup shredded carrots

1/4 cup crumbled feta cheese (optional)

1/4 cup Kalamata olives, pitted and sliced

2 tablespoons balsamic vinegar or your favorite dressing

Salt and pepper, to taste

Instructions

Prepare the Ingredients: Start by slicing the cucumber and bell pepper into thin strips. Rinse the baby spinach or mixed greens under cold water and pat dry with a paper towel.

Spread the Hummus: Lay a whole wheat or spinach wrap flat on a clean surface. Generously spread 1/4 cup of roasted garlic hummus over the entire surface of the wrap, leaving a small border around the edges.

Layer the Vegetables: On top of the hummus, evenly distribute the cucumber slices, bell pepper strips, baby spinach, and shredded carrots. If you're adding feta cheese and olives, sprinkle them over the vegetables.

Season and Drizzle: Lightly drizzle the balsamic vinegar over the vegetables. Season with a pinch of salt and a dash of pepper to enhance the flavors.

Wrap It Up: Starting from one end, tightly roll the wrap while tucking in the sides to secure the filling. Continue to roll until the wrap is fully closed and sealed.

Slice and Serve: Using a sharp knife, slice the wrap in half diagonally for easy eating. Serve immediately or wrap in parchment for a portable lunch option.
