2 medium-sized russet potatoes

1 bulb of garlic

2 ripe avocados

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper, to taste

1 teaspoon smoked paprika

Fresh herbs (like cilantro or parsley) for garnish

Chili flakes (optional, for a spicy kick)

Prep the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the bulb of garlic to expose the cloves. Drizzle with a teaspoon of olive oil and wrap it in aluminum foil. Place it on a baking sheet and roast for about 30-40 minutes or until the cloves are soft and golden.

    Cook the Potatoes: While the garlic is roasting, wash and scrub the potatoes. Cut them into thin slices, approximately ¼ inch thick. Toss them in a bowl with the remaining olive oil, smoked paprika, salt, and pepper. Ensure the slices are evenly coated.

      Roast the Potatoes: Spread the potato slices in a single layer on the baking sheet and place them in the oven (you can put them in with the garlic if you have space). Roast for 20-25 minutes, flipping halfway through, until golden brown and crispy.

        Prepare the Avocado Mixture: In a mixing bowl, scoop out the avocados. Squeeze in the lemon juice, add a pinch of salt and pepper, and squeeze the roasted garlic cloves out of their skins into the bowl. Mash everything together until smooth but still slightly chunky. Adjust seasoning if needed.

          Assemble the Toast: Once the potato slices are done, remove them from the oven. On each slice, generously spread the garlic avocado mixture.

            Garnish and Serve: Top with freshly chopped herbs and a sprinkle of chili flakes for a bit of heat if desired. Serve immediately while still warm and crispy.
