2 cups cherry tomatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

12 oz spaghetti or your favorite pasta

1 cup fresh basil leaves, roughly chopped

½ cup grated Parmesan cheese, plus more for serving

Zest of 1 lemon

Juice of 1 lemon

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Tomatoes: In a large bowl, toss the halved cherry tomatoes with olive oil, minced garlic, salt, black pepper, and red pepper flakes (if using). Ensure the tomatoes are evenly coated.

      Roast the Tomatoes: Spread the tomato mixture onto a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until the tomatoes are soft and slightly caramelized.

        Cook the Pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

          Combine Ingredients: In a large skillet over medium heat, add the roasted cherry tomatoes along with their juices. Add the drained pasta to the skillet. Toss to combine, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

            Finish the Dish: Stir in the chopped basil, grated Parmesan cheese, lemon zest, and lemon juice. Toss everything together over low heat for 1-2 minutes until the cheese is melted and the pasta is well coated with the sauce.
