1 large whole wheat flatbread or pizza dough

4 medium-sized carrots, peeled and cut into thin ribbons or sticks

2 tablespoons olive oil

Salt and black pepper, to taste

1 teaspoon dried thyme (or fresh thyme, if available)

1 clove garlic, minced

1 cup goat cheese, crumbled

1/2 cup arugula or mixed greens

1 teaspoon honey (optional for drizzling)

Balsamic reduction (for drizzling, optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Carrots: In a mixing bowl, toss the carrot ribbons or sticks with olive oil, salt, pepper, and dried thyme until well coated.

      Roast the Carrots: Spread the carrots evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized, flipping halfway through for even roasting.

        Prepare the Flatbread: While the carrots are roasting, prepare the flatbread. If using pizza dough, roll it out to your desired size. Place the flatbread on a baking sheet or pizza stone.

          Add Garlic and Cheese: Lightly brush the flatbread with olive oil and sprinkle the minced garlic over the surface. Sprinkle the crumbled goat cheese evenly across the top.
