1 medium butternut squash, peeled and cubed

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1 teaspoon dried thyme or fresh thyme leaves

1 store-bought flatbread or naan

1/2 cup ricotta cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tablespoon honey

Fresh arugula for garnish

Balsamic glaze for drizzling

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Squash: In a bowl, toss the cubed butternut squash with olive oil, salt, black pepper, cayenne pepper (if using), and thyme. Make sure the squash is well-coated.

      Roast Squash: Spread the squash out on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, stirring halfway through.

        Prepare Flatbread: While the squash is roasting, place your flatbread on a separate baking sheet. Spread the ricotta cheese evenly over the flatbread, followed by the shredded mozzarella and grated Parmesan.

          Assemble Flatbread: Once the squash is out of the oven, evenly distribute it over the cheese-covered flatbread.

            Bake Flatbread: Return the flatbread to the oven (you can turn the oven down to 375°F if you wish) and bake for an additional 10-15 minutes, until the cheese is bubbly and the edges of the flatbread are crispy.

              Drizzle and Garnish: Once the flatbread is done, remove it from the oven, drizzle with honey, and top with fresh arugula. Finish with a drizzle of balsamic glaze for an extra burst of flavor.
