1 teaspoon onion powder

Salt and pepper to taste

2 cups shredded cheddar cheese

2 cups crushed Ritz crackers

½ cup unsalted butter, melted

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Mix the Base: In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well combined.

Add Cheese: Stir in 1 cup of shredded cheddar cheese into the chicken mixture, ensuring it is evenly distributed.

Transfer to Casserole Dish: Pour the chicken mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

Prepare the Topping: In a separate bowl, combine the crushed Ritz crackers with melted butter. Mix until the crackers are well coated with butter.

Top the Casserole: Sprinkle the Ritz cracker mixture evenly over the chicken casserole. Then, add the remaining 1 cup of shredded cheddar cheese on top of the crackers.

Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is heated through.

Serve and Garnish: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Serve warm and enjoy!
