1 cup (170g) dark chocolate (70% cocoa), chopped

1/2 cup (113g) unsalted butter

2 large eggs

2 large egg yolks

1/2 cup (100g) granulated sugar

1/4 cup (30g) all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

Optional: powdered sugar for dusting, fresh berries for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and grease a muffin tin with butter or non-stick spray. If using, place parchment paper on the bottom of each muffin cup for easy removal.

    Melt Chocolate & Butter: In a medium heatproof bowl, combine the chopped dark chocolate and butter. Melt them together by placing the bowl over a pot of simmering water (double boiler method), stirring frequently until smooth. Remove from heat and set aside to cool slightly.

      Mix Eggs and Sugar: In a separate mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and slightly frothy.

        Combine Chocolate Mixture: Slowly pour the cooled chocolate and butter mixture into the egg mixture, stirring continuously to combine and prevent curdling.

          Incorporate Dry Ingredients: Sift in the flour and salt, and add the vanilla extract. Gently fold the mixture until just combined, being careful not to overmix.

            Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.

              Bake: Bake in the preheated oven for 12-14 minutes, or until the edges are firm, but the centers still look slightly soft.

                Cool & Serve: Remove from the oven and let the muffins cool for 1 minute. Carefully invert them onto a serving plate or wire rack and gently lift the muffin tin off. Allow to cool for a few minutes, then dust with powdered sugar if desired and serve immediately while the centers are molten.

                  Garnish: For a delicious touch, add fresh berries on the side or indulge in a scoop of vanilla ice cream alongside these heavenly muffins.
