250g digestive biscuits

100g unsalted butter, melted

4 tbsp golden syrup

200g cornflakes

100g desiccated coconut

100g raisins or sultanas

50g chopped mixed nuts (optional)

150g icing sugar, sifted

2 tbsp water

1 tsp vanilla extract

Instructions
 

Prep the Base: Start by preheating your oven to 180°C (350°F). In a mixing bowl, crush the digestive biscuits into fine crumbs. Pour in the melted butter and mix until well combined.

    Form the Tart Base: Press the biscuit mixture into the bottom and sides of a tart or pie tin (approximately 9 inches), ensuring an even layer. Bake in the preheated oven for about 10 minutes, until slightly golden. Remove and let cool.

      Mix the Filling: In another large bowl, combine the cornflakes, desiccated coconut, raisins (or sultanas), and chopped nuts. Stir until evenly distributed.

        Add Sweetness: In a small saucepan over low heat, warm the golden syrup gently until it is runny. Pour the warm syrup over the cornflake mixture and mix thoroughly until the cornflakes are well-coated.
