Rainbow Summer Rolls

Ingredients
  

8 rice paper wrappers

1 cup cooked vermicelli rice noodles

1 cup shredded red cabbage

1 cup shredded carrots

1 cup cucumber, julienned

1 cup bell peppers (assorted colors), julienned

1 cup fresh mint leaves

1 cup fresh cilantro

1 ripe avocado, sliced

1/4 cup sesame seeds (toasted, for garnish)

For the Dipping Sauce:

1/4 cup peanut butter

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sriracha (optional, for spice)

Water (to reach desired consistency)

Instructions
 

Prepare the Filling:

    - Cook the vermicelli rice noodles according to package instructions. Drain and rinse with cold water to prevent sticking. Set aside.

      - Prep all the vegetables and herbs by washing and cutting them into thin strips.

        Assemble the Rainbow Rolls:

          - Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft and pliable. Lay it flat on a clean surface.

            - Start layering your fill: begin with a small amount of vermicelli noodles (about 2 tablespoons), then place a few strips of red cabbage, carrots, cucumber, bell pepper, a couple of mint leaves, cilantro, and a slice of avocado.

              - Fold the sides of the rice paper in towards the filling, then tightly roll from the bottom up to form a neat roll. Repeat this step with the remaining rice paper wrappers and filling ingredients.

                Make the Dipping Sauce:

                  - In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey/maple syrup, and sriracha until smooth.

                    - Add water gradually, mixing until the sauce reaches your desired creamy consistency.

                      Serve:

                        - Arrange the rainbow summer rolls on a platter and sprinkle with toasted sesame seeds for garnish.

                          - Serve with the tangy dipping sauce on the side.
