Quick Thai Basil Chicken

1 lb (450g) boneless chicken thighs, thinly sliced

3 cloves garlic, minced

2 shallots, thinly sliced

2-3 Thai bird chilies, sliced (adjust based on heat preference)

1 cup fresh Thai basil leaves

2 tablespoons vegetable oil

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon fish sauce

2 teaspoons sugar (preferably palm sugar)

1 teaspoon black pepper

Cooked jasmine rice, for serving

Instructions
 

Prepare the Marinade: In a bowl, combine the sliced chicken, soy sauce, oyster sauce, fish sauce, sugar, and black pepper. Mix well and let it marinate for about 15 minutes while you prep the other ingredients.

    Heat the Oil: Heat the vegetable oil in a large skillet or wok over medium-high heat.

      Sauté Aromatics: Add the minced garlic, sliced shallots, and Thai bird chilies to the hot oil. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.

        Cook the Chicken: Increase the heat to high and add the marinated chicken to the skillet. Stir-fry for approximately 5-7 minutes, or until the chicken is cooked through and browned.

          Add the Basil: Once the chicken is cooked, reduce the heat slightly and fold in the Thai basil leaves. Stir-fry for an additional 1-2 minutes, allowing the basil to wilt and infuse its flavor throughout the dish.

            Serve: Serve the Thai basil chicken hot over a bed of jasmine rice, garnished with additional basil leaves if desired.
