Quick Garlic Fried Rice

2 cups cooked jasmine rice (chilled)

4 cloves garlic, minced

2 tablespoons vegetable oil

1 tablespoon soy sauce

1 tablespoon oyster sauce (optional)

2 green onions, finely chopped

1/2 cup frozen peas and carrots (thawed)

2 large eggs, lightly beaten

Salt and pepper to taste

1 teaspoon sesame oil (for drizzling)

Fresh cilantro leaves for garnish (optional)

Instructions
 

Heat the Oil: In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

    Sauté Garlic: Add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn it!

      Add Eggs: Push the garlic to the side of the skillet and pour the beaten eggs into the center. Scramble the eggs until fully cooked and then combine with the garlic.

        Stir in Vegetables: Add the thawed peas and carrots to the skillet and stir-fry for another 1-2 minutes until heated through.

          Add Rice: Add the chilled jasmine rice to the skillet. Break apart any clumps with a spatula and mix thoroughly with the egg and vegetables.

            Season the Rice: Pour in the soy sauce and oyster sauce (if using). Stir everything well and continue to fry for about 3-4 minutes, allowing the rice to get a little crispy.

              Finish Up: Add the chopped green onions and season with salt and pepper to taste. Drizzle the sesame oil on top and stir until combined.
