4 slices of thick-cut bacon, chopped

2 cups cooked jasmine rice (preferably day-old)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, corn)

2 large eggs, beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

2 green onions, sliced

Salt and pepper to taste

Cook the Bacon: In a large skillet or wok over medium heat, cook the chopped bacon until it's crispy and the fat has rendered, about 5-7 minutes. Use a slotted spoon to remove the bacon and set it aside, leaving the bacon fat in the pan.

    Sauté Aromatics: In the same pan with the bacon fat, add the chopped onion and sauté for about 2-3 minutes until it becomes translucent. Add the minced garlic and sauté for another minute until fragrant.

      Add Vegetables: Stir in the mixed vegetables and cook for about 2-3 minutes, until they are heated through.

        Scramble the Eggs: Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the cleared side and scramble them until fully cooked. Once done, mix the eggs with the vegetables.

          Incorporate Rice: Add the cooked jasmine rice to the skillet. Use a spatula to break up any clumps and combine everything thoroughly.

            Season: Pour the soy sauce and oyster sauce (if using) over the rice. Drizzle with sesame oil and mix well to coat the rice. Stir in the crispy bacon and green onions. Season with salt and pepper to taste.

              Serve: Remove from heat and serve immediately as a side dish or a main meal!
