Ingredients
  

1 cup rolled oats

1 cup unsweetened almond milk (or any milk of your choice)

1/2 cup canned pumpkin puree

1 tablespoon maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

1 teaspoon pumpkin spice mix (or 1/2 tsp cinnamon + 1/4 tsp nutmeg + 1/4 tsp ginger)

Pinch of salt

2 tablespoons chia seeds (optional for added thickness)

Toppings: yogurt, chopped pecans or walnuts, cranberries, or coconut flakes

Instructions
 

In a mixing bowl, combine the rolled oats, almond milk, canned pumpkin puree, maple syrup, vanilla extract, and pumpkin spice mix. Stir until all ingredients are well combined.

    If using chia seeds, add them to the mixture and stir well. This will help to thicken the oats overnight.

      Add a pinch of salt to enhance the flavors and mix once more.

        Divide the oat mixture into two jars or airtight containers. Seal them tightly.
