2 cups old-fashioned rolled oats

1 cup pumpkin seeds

1 cup walnuts, chopped

1 cup dried cranberries

1/2 cup maple syrup

1/4 cup coconut oil, melted

1 cup pumpkin puree

1 tsp vanilla extract

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp allspice

1/4 tsp sea salt

Preheat the oven: Start by preheating your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    Mix the dry ingredients: In a large bowl, combine the rolled oats, pumpkin seeds, chopped walnuts, and dried cranberries. Stir well to evenly distribute the ingredients.

      Combine the wet ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, pumpkin puree, vanilla extract, cinnamon, nutmeg, allspice, and sea salt until smooth and well blended.

        Combine wet and dry mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is thoroughly coated and mixed together.

          Spread on baking sheet: Transfer the mixture to the prepared baking sheet, spreading it out evenly. Use a spatula to press it down slightly for clumping.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, stirring halfway through to ensure even baking. Bake until the granola is golden brown and fragrant.

              Cool and break apart: Once baked, remove from the oven and allow the granola to cool completely on the baking sheet. This will help it become crunchy as it cools. Break apart any large clumps once cooled.

                Store: After breaking apart the granola, transfer it to an airtight container. It can be stored at room temperature for up to a week.
