Pumpkin Cream Cheese Muffins

For the Muffins:

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

½ cup vegetable oil

1 cup pure pumpkin puree (canned or homemade)

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

Optional Topping:

¼ cup chopped pecans or walnuts

A sprinkle of cinnamon and sugar mixture

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

    Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.

      Prepare Wet Ingredients: In a separate bowl, mix together the vegetable oil, pumpkin puree, granulated sugar, eggs, and vanilla extract until well combined.

        Combine Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; a few lumps are okay.

          Make Cream Cheese Filling: In another bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy.

            Fill Muffin Tin: Spoon a tablespoon of the muffin batter into each lined muffin cup. Then, add about a teaspoon of the cream cheese filling on top of the batter, followed by another tablespoon of muffin batter to cover the cream cheese.
