3-4 lbs beef chuck roast

2 tablespoons olive oil

1 large onion, sliced

4 cloves garlic, minced

1 cup beef broth

1 tablespoon Worcestershire sauce

2 tablespoons apple cider vinegar

2 tablespoons brown sugar

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional for heat)

8 sandwich rolls or buns

Coleslaw (for topping)

Pickles (for garnish)

Instructions
 

Sear the Meat: Heat olive oil in a large skillet over medium-high heat. Season beef chuck roast with salt and pepper. Sear the roast on all sides until browned (about 4-5 minutes per side). Remove from skillet and set aside.

    Sauté Aromatics: In the same skillet, add sliced onions and cook until softened and slightly caramelized (about 5-7 minutes). Stir in minced garlic and cook for another minute until fragrant.

      Prepare the Braising Liquid: In a slow cooker, combine beef broth, Worcestershire sauce, apple cider vinegar, brown sugar, smoked paprika, cumin, chili powder, salt, black pepper, and cayenne (if using). Stir to mix well.

        Add Ingredients to Slow Cooker: Place the seared chuck roast in the slow cooker, followed by the sautéed onions and garlic. Make sure the roast is mostly submerged in the liquid.

          Cook the Beef: Cover and cook on low for 8-10 hours or high for 4-5 hours, until the beef is tender and can be easily pulled apart with forks.

            Shred the Beef: Once the beef is done cooking, remove it from the slow cooker and place it on a large cutting board. Use two forks to shred the meat into bite-sized pieces. Return the shredded beef to the slow cooker and stir it into the sauce, allowing it to soak up the flavor.
