Ingredients

1 cup rolled oats

1/2 cup almond flour

1 scoop vanilla protein powder (whey or plant-based)

1 tablespoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup unsweetened almond milk (or any milk of your choice)

2 large eggs

1 tablespoon maple syrup (optional for sweetness)

1 teaspoon vanilla extract

1/2 cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

Cooking spray or coconut oil for greasing the waffle maker

Instructions

Preheat the Waffle Maker: Start by preheating your waffle maker according to the manufacturer's instructions.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, protein powder, baking powder, cinnamon, and salt. Whisk until fully blended.

Combine Wet Ingredients: In another bowl, whisk together the almond milk, eggs, maple syrup, and vanilla extract. Make sure the mixture is well-combined.

Combine Wet and Dry: Pour the wet ingredients into the bowl of dry ingredients. Stir until everything is just combined. If using, fold in the chopped nuts or chocolate chips.

Grease Waffle Maker: Lightly spray the waffle maker with cooking spray or brush it with coconut oil to prevent sticking.

Cook the Waffle Bites: Pour an appropriate amount of batter onto the waffle maker (refer to your manufacturer's instructions for the correct amount). Close the lid and cook for 3-5 minutes, or until the waffles are golden brown and crisp.

Serve and Enjoy: Carefully remove the waffle bites and repeat with the remaining batter. Serve them warm with toppings like fresh berries, banana slices, yogurt, a drizzle of honey, or additional maple syrup.

Store Leftovers: If you have any leftovers, let the waffle bites cool completely, then store them in an airtight container in the fridge for up to 3 days, or freeze them for up to 1 month. To reheat, pop them in the toaster or microwave for a quick snack.
