Pineapple Teriyaki Chicken Skewers

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

¼ cup soy sauce (low sodium)

¼ cup pineapple juice

2 tablespoons brown sugar

2 tablespoons honey

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon cornstarch (optional, for thickening)

Skewers (soaked in water for 30 minutes if wooden)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, pineapple juice, brown sugar, honey, minced garlic, grated ginger, sesame oil, and rice vinegar. If you prefer a thicker marinade, mix the cornstarch with a little water and add it to the marinade. Set aside.

    Marinate the Chicken: Place the chicken pieces in a large resealable plastic bag or a bowl and pour half of the marinade over the chicken. Seal the bag or cover the bowl, then refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Prepare the Vegetables: While the chicken marinates, chop the pineapple and bell peppers into bite-sized chunks if you haven't already.

        Assemble the Skewers: After marinating, remove the chicken from the refrigerator. Thread the chicken, pineapple, and bell peppers onto the skewers, alternating between each ingredient.

          Grill the Skewers: Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Brush the remaining marinade over the skewers during the last few minutes of grilling for extra flavor.

            Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve hot, drizzled with additional teriyaki sauce if desired, and garnish with sesame seeds and chopped green onions.
