2 cups jasmine rice (cooked and cooled)

1 medium ripe pineapple (peeled, cored, and diced)

1 bell pepper (diced, any color)

1 small onion (finely chopped)

2 cloves garlic (minced)

1 cup peas (fresh or frozen)

2 green onions (sliced)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 teaspoon curry powder (optional)

2 tablespoons vegetable oil (for frying)

Salt and pepper to taste

1/4 cup roasted cashews (chopped, for garnish)

Fresh cilantro (for garnish)

Instructions
 

Prepare the Rice: Ensure the jasmine rice is cooked and cooled, preferably prepared the day before. This helps to prevent the rice from becoming mushy during frying.

    Sauté the Aromatics: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.

      Add Vegetables: Stir in the bell pepper and peas. Cook for another 3-4 minutes until the vegetables are tender yet still vibrant.

        Incorporate Pineapple: Add the diced pineapple to the skillet and cook for 2-3 minutes, allowing it to caramelize slightly. This enhances the sweetness of the pineapple.

          Mix in Rice: Increase the heat to high and add the cold jasmine rice. Break up any clumps and stir well to combine with the vegetable and pineapple mixture.
