1 ripe pineapple, peeled, cored, and diced

2 medium cucumbers, peeled and chopped

1 red bell pepper, diced

1 small red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeds removed and finely diced (optional)

Juice of 2 limes

2 tablespoons honey or agave syrup

Salt and pepper to taste

1/4 cup roasted peanuts, roughly chopped (optional for crunch)

Instructions
 

In a large mixing bowl, combine the diced pineapple, chopped cucumbers, red bell pepper, and red onion. Stir gently to mix the ingredients without mashing them.

    Add the chopped cilantro and diced jalapeño (if using) to the bowl, and toss everything together.

      In a small bowl, whisk together the lime juice and honey (or agave syrup) until smooth. Season the dressing with a pinch of salt and pepper.

        Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.

          Adjust the seasoning if necessary, adding more salt, pepper, or lime juice to taste.

            Let the salad sit for about 10-15 minutes to allow the flavors to meld before serving.

              Just before serving, sprinkle the chopped roasted peanuts on top for added crunch (optional).
