Pineapple Chicken Skewers

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

4 tablespoons soy sauce

2 tablespoons honey

2 tablespoons olive oil

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 teaspoon black pepper

1 teaspoon ground cumin

Juice of 1 lime

Salt to taste

Skewers (wooden or metal)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, honey, olive oil, grated ginger, minced garlic, black pepper, cumin, lime juice, and a pinch of salt. Whisk until well blended. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

    Prepare the Veggies and Fruit: While the chicken is marinating, prepare the red and green bell peppers, red onion, and pineapple chunks. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

      Assemble the Skewers: Thread the marinated chicken, pineapple, bell peppers, and onion onto the skewers alternately. A good mix would be chicken, pineapple, red pepper, green pepper, onion, and repeat until the skewer is filled.

        Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F / 190°C to 200°C). If using a grill pan, heat it over medium-high heat on the stovetop.

          Grill the Skewers: Lightly oil the grill grates or the grill pan. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Ensure the internal temperature of the chicken reaches 165°F (75°C).

            Serve and Enjoy: Remove the skewers from the grill and let them rest for a couple of minutes. Carefully remove the skewers (use a fork if necessary) and serve with additional lime wedges and cilantro, if desired.
