1 lb (450g) ground chicken

1 cup fresh pineapple, diced

1 red bell pepper, finely chopped

2 green onions, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or coconut aminos for a gluten-free option)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon vegetable oil

Salt and pepper to taste

1 head of butter lettuce or iceberg lettuce, leaves separated

Sesame seeds for garnish (optional)

Fresh cilantro for garnish (optional)

Prepare the Ingredients: Before you start cooking, gather and measure all your ingredients. Dice the pineapple, chop the red bell pepper, and slice the green onions.

    Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

      Add Ground Chicken: Add the ground chicken to the skillet. Break it apart with a spatula and cook until it’s browned and cooked through, about 5-7 minutes. Ensure it's cooked evenly.

        Incorporate Vegetables: Stir in the diced pineapple and chopped red bell pepper. Cook for an additional 3-4 minutes until the bell pepper softens slightly.

          Make the Sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and a pinch of salt and pepper. Pour this sauce over the chicken and vegetable mixture, stirring to combine well.

            Finish Up: Cook for another 1-2 minutes until everything is heated through and well-coated with the sauce. Taste and adjust seasoning if needed.

              Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the pineapple chicken mixture into the center. Add a sprinkle of sliced green onions, sesame seeds, and fresh cilantro on top for garnish.

                Serve: Roll the sides of the lettuce over the filling to create a wrap. Enjoy immediately while fresh and crunchy!
