1 cup sharp cheddar cheese, grated

½ cup cream cheese, softened

¼ cup mayonnaise

1-2 tablespoons diced pimentos, drained

1 teaspoon Worcestershire sauce

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

For the Burgers:

1 pound ground beef (80/20 blend for juiciness)

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

4 hamburger buns

Lettuce leaves (optional)

Sliced tomatoes (optional)

Pickles (optional)

Prepare the Pimento Cheese: In a medium mixing bowl, combine the grated sharp cheddar, softened cream cheese, mayonnaise, diced pimentos, Worcestershire sauce, garlic powder, onion powder, and a pinch of salt and pepper. Mix until well combined and creamy. Set aside in the refrigerator to chill while you prepare the burgers.

    Make the Burger Patties: In a large mixing bowl, combine the ground beef, smoked paprika, salt, and black pepper. Gently mix until just combined, being careful not to overwork the meat.

      Form the Patties: Divide the meat mixture into 8 equal portions. Take one portion, press it into a flat disc in your hand, and create a slight indentation in the center. Spoon about 1 tablespoon of the pimento cheese mixture into the indentation. Take a second portion of meat, flatten it out, and place it over the cheese-filled patty, sealing the edges to create a stuffed burger. Repeat with the remaining portions.

        Cook the Burgers: Preheat a grill or skillet over medium-high heat. Once hot, add the stuffed burgers. Cook for about 5-6 minutes on one side, then flip and cook for another 5-6 minutes, or until the internal temperature reaches 160°F (71°C). Be cautious when flipping to prevent the cheese from leaking.
