3 medium zucchinis (spiralized into noodles)

1 cup cherry tomatoes (halved)

1 cup baby spinach

1/2 cup homemade or store-bought basil pesto

1/4 cup pine nuts (toasted)

1/4 cup grated Parmesan cheese (plus extra for serving)

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

Start by spiralizing the zucchinis with a spiralizer to create zoodles. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.

    In a large mixing bowl, combine the spiralized zucchini, halved cherry tomatoes, and baby spinach.

      In a small bowl, mix together the basil pesto, olive oil, and lemon juice until well combined. If you’re using store-bought pesto, adjust the amount according to your taste preference.

        Pour the pesto mixture over the zoodle and vegetable mixture. Toss everything gently until the zoodles and veggies are well coated with the pesto.

          Add toasted pine nuts and grated Parmesan cheese to the salad. Stir to combine. Season with salt and pepper to taste.

            Serve immediately, garnished with extra Parmesan cheese and a sprinkle of freshly cracked pepper if desired.
