Pesto Pasta with Roasted Tomatoes

12 oz (340g) spaghetti or your choice of pasta

1 cup fresh basil leaves

1/4 cup pine nuts (toasted)

1/4 cup grated Parmesan cheese

2 garlic cloves

1/2 cup extra virgin olive oil

1/2 tsp salt

1/4 tsp freshly cracked black pepper

1 pint cherry tomatoes

1 tbsp balsamic vinegar

1/2 tsp dried oregano

Fresh basil leaves, for garnish

Extra Parmesan, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes: In a mixing bowl, combine the cherry tomatoes, balsamic vinegar, dried oregano, a pinch of salt, and a dash of pepper. Spread them out on a baking sheet. Roast for 20-25 minutes until they are blistered and caramelized.

      Cook the Pasta: Meanwhile, bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain the pasta and set aside.

        Make the Pesto: In a food processor, combine the fresh basil leaves, toasted pine nuts, Parmesan cheese, garlic cloves, salt, and pepper. Pulse until finely chopped. With the food processor running, gradually add the olive oil until it’s smooth and creamy. Taste and adjust seasoning if necessary.

          Combine Everything: In a large mixing bowl, combine the cooked pasta and pesto. If the mixture appears too dry, add a little reserved pasta water until you achieve your desired consistency. Gently fold in the roasted tomatoes.

            Serve: Plate the pasta and garnish with fresh basil leaves and extra Parmesan cheese. Drizzle with a little more olive oil if desired.
