4 cod fillets (about 6 ounces each)

1/2 cup fresh basil pesto (store-bought or homemade)

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 lemon, sliced into thin rounds

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: Lightly grease a baking dish with olive oil to prevent sticking.

      Season the Cod: Pat the cod fillets dry with paper towels. Season each fillet on both sides with salt and pepper.

        Spread the Pesto: Evenly spread a generous layer of the basil pesto over each cod fillet.

          Add Parmesan: Sprinkle the grated Parmesan cheese on top of the pesto-coated fillets, ensuring a good coverage for a crispy texture.

            Add Lemon Slices: Place a thin slice of lemon on top of each fillet. This will add a bright flavor during baking.

              Bake the Cod: Carefully place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cod is cooked through and flakes easily with a fork (internal temperature should reach 145°F/63°C).

                Garnish & Serve: Remove from the oven and let it rest for a couple of minutes. Garnish with fresh basil leaves if desired, and serve with your choice of sides like roasted vegetables or a light salad.
