2 cups cooked chicken breast, shredded or sliced

1/2 cup basil pesto (store-bought or homemade)

8 slices fresh mozzarella cheese

1 large ripe tomato, sliced

1/4 cup fresh basil leaves

4 ciabatta rolls (or your favorite sandwich bread)

2 tablespoons balsamic glaze

2 tablespoons olive oil

Salt and pepper to taste

Prepare the Chicken: In a mixing bowl, combine the cooked chicken with the basil pesto. Make sure the chicken is thoroughly coated. Season with salt and pepper according to your taste.

    Toast the Bread: Preheat your grill or a skillet over medium heat. Drizzle the outside of each ciabatta roll with olive oil. Place them on the grill or in the skillet, cut sides down, and toast until golden brown and crispy. This usually takes about 2-3 minutes per side.

      Assemble the Sandwich: Once toasted, layer the chicken mixture evenly on the bottom half of each ciabatta roll. Place two slices of fresh mozzarella cheese on top of the chicken, followed by slices of fresh tomato, and a few basil leaves.
