2 lbs russet potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup milk (whole or 2%)

4 tbsp unsalted butter

1 tsp dried thyme

1 tsp smoked paprika

Salt and pepper to taste

1/2 cup chives, chopped (for garnish)

1 cup shredded cheddar cheese (optional for topping)

Sauté the Aromatics: In a large pot over medium heat, melt the unsalted butter. Add the chopped onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and cook for an additional 1 minute, making sure it doesn't burn.
