Pecan Pie Cheesecake Bars

For the Crust:

1 cup graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Layer:

16 oz cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

2 large eggs

For the Pecan Pie Topping:

1 cup pecans, chopped

3/4 cup brown sugar

1/4 cup corn syrup

1/4 cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

Instructions
 

Prepare the Crust:

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture evenly into the bottom of a greased 9x9 inch baking dish. Bake for 8-10 minutes or until lightly golden. Remove from oven and set aside to cool.

      Make the Cheesecake Layer:

        In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add granulated sugar and vanilla extract, combining well. Add the eggs one at a time, beating until just combined. Pour the cheesecake mixture over the cooled crust and spread evenly. Bake for 20-25 minutes, or until the center is set but slightly jiggly. Remove from oven and let cool for about 30 minutes.

          Prepare the Pecan Pie Topping:

            In another bowl, mix together chopped pecans, brown sugar, corn syrup, melted butter, eggs, and vanilla extract until well combined. Pour the pecan mixture evenly over the cheesecake layer.

              Bake the Combined Layers:

                Return the baking dish to the oven and bake for an additional 25-30 minutes, or until the pecan topping is bubbly and set.

                  Cool and Chill:

                    Once baked, remove from the oven and allow to cool at room temperature for about 1 hour. Then, refrigerate for at least 2-4 hours (or overnight) to set fully.

                      Serve:

                        Once chilled, cut into bars and serve. Optionally, top with whipped cream and additional chopped pecans for extra flair!
