Ingredients

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 tablespoon sugar

1 ripe banana, mashed

1/2 cup creamy peanut butter

1 large egg

1 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1/3 cup chocolate chips

Cooking spray or butter for the pan

Instructions

Mix Dry Ingredients: In a large mixing bowl, sift together the flour, baking powder, salt, and sugar. Set aside.

Combine Wet Ingredients: In another bowl, whisk together the mashed banana, peanut butter, egg, milk, and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently stir until just combined. Be careful not to overmix; a few lumps are okay. Fold in the chocolate chips.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.

Cook the Pancakes: For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancake and cook for an additional 1-2 minutes until golden brown and cooked through.

Serve: Repeat with the remaining batter, adding more oil to the skillet as needed. Serve warm with maple syrup, sliced bananas, and more chocolate chips, if desired.
