Peach & Strawberry Chia Jam

2 cups fresh peaches, diced (about 3 medium peaches)

2 cups fresh strawberries, hulled and sliced

1/4 cup honey or maple syrup (adjust based on sweetness preference)

2 tablespoons chia seeds

1 tablespoon lemon juice

1/2 teaspoon vanilla extract (optional)

A pinch of salt

Prepare the Fruit: In a medium bowl, combine the diced peaches and sliced strawberries. If desired, mash the fruit lightly with a fork for a smoother texture.

    Cook the Fruit Mixture: In a saucepan over medium heat, add the mashed peaches and strawberries. Stir in the honey (or maple syrup), lemon juice, and a pinch of salt. Cook for about 10 minutes, stirring occasionally, until the mixture begins to bubble and the fruit softens.

      Combine with Chia Seeds: Once the fruit mixture is bubbly and fragrant, remove it from the heat. Stir in the chia seeds and vanilla extract (if using). The chia seeds will absorb the liquid and help thicken the jam.

        Cool and Thicken: Let the mixture sit at room temperature for about 15 minutes. You’ll notice it starting to thicken as the chia seeds swell.

          Blend (Optional): If you prefer a smoother texture, you can use an immersion blender or transfer the jam to a regular blender and pulse until desired consistency is reached.

            Store the Jam: Pour the jam into a clean jar or container. Allow it to cool completely before sealing. Store it in the refrigerator for up to 2 weeks.

              Serve: Enjoy your homemade Peach & Strawberry Chia Jam on toast, mixed into yogurt, or as a delicious topping for desserts!
