Peach Quesadillas

4 large flour tortillas

2 large ripe peaches, thinly sliced

1 cup shredded sharp cheddar cheese

1/2 cup crumbled goat cheese

2 tablespoons honey

1 teaspoon cinnamon

1 tablespoon butter (for grilling)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Peaches: Wash and slice the peaches into thin wedges. In a bowl, toss the peach slices with honey and cinnamon to coat evenly.

    Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle half of the cheddar cheese evenly over half of the tortilla. Layer with half of the prepared peach mixture and then dollop with half of the goat cheese. Fold the tortilla over to create a half-moon shape. Repeat with the second tortilla.

      Grill the Quesadillas: In a skillet over medium heat, melt 1 tablespoon of butter. Place the prepared quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese has melted. Remove from heat.

        Slice and Serve: Let the quesadilla sit for a minute, then slice it into wedges. Garnish with fresh mint leaves if desired. Serve immediately and enjoy the sweet and savory flavors!
