Peach Honey BBQ Chicken Sliders

1 lb boneless, skinless chicken breast

1 cup peach preserves

1/2 cup honey

1/4 cup apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 slider buns

1 cup coleslaw (store-bought or homemade)

Fresh peach slices for garnish (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Prep the Chicken: Season the chicken breasts with salt, pepper, garlic powder, onion powder, and smoked paprika.

    Make the BBQ Sauce: In a medium saucepan, combine peach preserves, honey, apple cider vinegar, and Dijon mustard. Cook over medium heat, stirring occasionally until the sauce is bubbling and well combined, about 5-7 minutes.

      Cook the Chicken: Preheat your grill or skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

        Glaze the Chicken: In the last few minutes of cooking, brush the peach honey BBQ sauce over the chicken to glaze it. Reserve some sauce for serving.

          Shred the Chicken: Once the chicken is cooked, remove it from the grill, let it rest for 5 minutes, and then shred it using two forks or chop it into small pieces.

            Assemble the Sliders: Cut the slider buns in half. Place a generous amount of shredded chicken on the bottom half of each bun, top with coleslaw, and if desired, add fresh peach slices. Drizzle with extra peach honey BBQ sauce and sprinkle with cilantro.

              Serve: Place the top half of the buns over the sliders and serve immediately with extra sauce on the side.
