Peach Chicken Tacos

1 lb boneless, skinless chicken thighs

2 ripe peaches, diced

1 red bell pepper, diced

1 small red onion, finely chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon honey

Juice of 1 lime

8 small corn or flour tortillas

Fresh cilantro, for garnish

Crumbled queso fresco (optional)

Instructions
 

Marinate Chicken: In a bowl, combine the chicken thighs, cumin, smoked paprika, chili powder, salt, pepper, olive oil, honey, and lime juice. Mix well until the chicken is evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Chicken: Heat a large skillet over medium-high heat. Add marinated chicken thighs and cook for about 5-7 minutes on each side, or until fully cooked and golden brown. The internal temperature should reach 165°F (75°C). Remove from the skillet and let rest for a few minutes.

      Sauté the Vegetables: In the same skillet, add a splash of olive oil if needed. Sauté the red onion and garlic for about 2-3 minutes until softened. Add the diced red bell pepper and peaches, cooking for another 3-4 minutes until the peaches are slightly softened and the flavors are well combined.

        Shred the Chicken: Once the chicken has rested, shred it into bite-sized pieces using two forks. Return the chicken to the skillet with the peach and bell pepper mixture. Stir to combine and heat through for an additional 2 minutes.

          Warm the Tortillas: While the chicken mixture is heating, warm the tortillas in a dry skillet or microwave until pliable.

            Assemble Tacos: To assemble the tacos, place a generous amount of the chicken-peach mixture in the center of each tortilla. Top with fresh cilantro and crumbled queso fresco, if using.
