Ingredients

2 large ripe peaches, sliced thinly

1 tablespoon olive oil

1 teaspoon balsamic vinegar

½ teaspoon salt

½ teaspoon black pepper

1 pre-made flatbread or naan

½ cup fresh mozzarella cheese, torn into pieces

¼ cup fresh basil leaves, roughly chopped

1 tablespoon honey (optional)

1 tablespoon pine nuts (optional)

Arugula for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Peaches: In a mixing bowl, combine the sliced peaches with olive oil, balsamic vinegar, salt, and black pepper. Toss gently to coat evenly.

Assemble Flatbread: On a baking sheet, lay out the flatbread. Evenly distribute the torn mozzarella pieces over the flatbread, followed by the marinated peach slices.

Bake: Place the flatbread in the preheated oven and bake for about 10-12 minutes until the edges are crisp and the cheese has melted.

Add Freshness: Once out of the oven, sprinkle the fresh basil over the top. If desired, drizzle with honey and sprinkle pine nuts for added texture and sweetness.

Garnish and Serve: If using, top with a handful of arugula for an extra peppery kick. Slice into pieces and serve warm.
