4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 cup cherry tomatoes, halved

1 large onion, thinly sliced

3 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

1/2 cup chicken broth

1 tablespoon olive oil

1 tablespoon balsamic vinegar

Salt and pepper, to taste

Optional: crumbled feta cheese for topping

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, reduce the heat to medium. Add the sliced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

        Add Peaches and Tomatoes: Incorporate the sliced peaches and halved cherry tomatoes into the skillet. Sauté for about 3-4 minutes, allowing the peaches to soften slightly.

          Deglaze the Skillet: Pour in the chicken broth and balsamic vinegar. Stir well, scraping up any browned bits from the bottom of the skillet.

            Combine Chicken and Herbs: Return the chicken breasts to the skillet. Sprinkle chopped basil over the top. Let everything simmer together for about 5 minutes, allowing the flavors to blend.

              Serve: Once plated, you can optionally sprinkle crumbled feta cheese over the dish for an extra layer of flavor. Enjoy warm!
