Parmesan Lemon Chicken Skewers

Ingredients
  

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1/2 cup freshly grated Parmesan cheese

1/4 cup olive oil

2 tablespoons freshly squeezed lemon juice

1 tablespoon lemon zest

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Wooden skewers (soaked in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a medium bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, black pepper, and red pepper flakes (if using). Whisk until well combined.

    Marinate the Chicken: Add the cubed chicken breasts to the bowl of marinade. Toss until all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F / 190°C to 200°C).

        Prepare the Skewers: Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece for even cooking.

          Grill the Chicken Skewers: Place the chicken skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and has nice grill marks.

            Add the Parmesan: During the last 2 minutes of grilling, sprinkle the grated Parmesan cheese over the skewers. Close the grill lid, allowing the cheese to melt slightly.

              Serve: Once cooked and cheese is melted, remove the skewers from the grill. Garnish with freshly chopped parsley before serving.
