Ingredients

2 large sweet potatoes

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Peel the sweet potatoes and cut them into medallions, about ½-inch thick.

Season the Medallions: In a large mixing bowl, combine the olive oil, garlic powder, dried oregano, dried thyme, smoked paprika, salt, and black pepper. Add the sweet potato medallions and toss them until evenly coated with the herb and spice mixture.

Coat with Parmesan: Spread the medallions on a baking sheet lined with parchment paper. Generously sprinkle the grated Parmesan cheese over each medallion, pressing slightly to ensure the cheese adheres.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, flipping the medallions halfway through. The medallions should be tender and the Parmesan should be golden and crispy.

Serve: Once baked, remove from the oven and let them cool for a couple of minutes. Garnish with fresh chopped parsley for a pop of color and extra flavor. Serve warm as a delicious side dish or appetizer.
