8 oz elbow macaroni

2 cups vegetable broth

1 cup milk (whole or 2%)

1/2 cup balsamic vinegar

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Salt, to taste

Instructions
 

Prepare the Base: In a large pot over medium heat, add the olive oil and minced garlic. Sauté for about 1-2 minutes until fragrant, ensuring the garlic does not burn.

    Cook the Pasta: Add the elbow macaroni, vegetable broth, milk, balsamic vinegar, dried oregano, black pepper, and red pepper flakes (if using) to the pot. Stir well to combine.

      Simmer: Increase the heat to high until the mixture begins to boil. Once boiling, reduce the heat to a simmer. Cover the pot and cook for about 8-10 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.

        Cheesy Goodness: Remove the pot from the heat. Stir in the shredded cheddar cheese and grated Parmesan cheese until fully melted and creamy. Taste and adjust seasoning with salt if needed.

          Garnish and Serve: Divide the mac and cheese into bowls, garnish with fresh basil leaves, and a drizzle of additional balsamic vinegar if desired. Serve immediately and enjoy!
