Ingredients

1 cup orzo pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium zucchinis, diced

1 ½ cups fresh or frozen corn kernels

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

½ cup grated Parmesan cheese (optional, or use nutritional yeast for a vegan option)

Fresh basil leaves, for garnish

Instructions

Sauté Aromatics: In a large skillet or sauté pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Cook Zucchini: Add the diced zucchinis to the pan. Sauté for about 5 minutes, until they start to soften.

Add Corn & Spices: Stir in the corn, dried thyme, smoked paprika, salt, and pepper. Mix well to combine, cooking for another 2-3 minutes.

Incorporate Orzo: Pour in the orzo pasta and vegetable broth. Stir well, ensuring the orzo is evenly distributed in the liquid.

Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pan and let simmer for about 10-12 minutes, or until the orzo is al dente and has absorbed most of the liquid.

Creamy Finish: Once the orzo is cooked, stir in the heavy cream and Parmesan cheese (if using). Adjust seasoning with additional salt and pepper, to taste. Cook for an additional 2-3 minutes, stirring until creamy.

Serve: Once creamy and heated through, remove from the heat. Garnish with fresh basil leaves before serving.
