1 ½ cups grated zucchini (about 1 medium zucchini, squeezed of excess moisture)

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional, for extra decadence)

1/2 cup chopped walnuts or pecans (optional, for added crunch)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easier removal.

    Prepare the zucchini: Grate the zucchini using a box grater. After grating, place the zucchini in a clean kitchen towel and squeeze out any excess moisture. Set aside.

      Mix dry ingredients: In a large mixing bowl, combine the all-purpose flour, cocoa powder, baking soda, baking powder, salt, and cinnamon. Whisk until well combined.

        Combine sugars and wet ingredients: In the same bowl, add the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix everything together using a spatula or a whisk until just combined.

          Add zucchini and mix: Gently fold the grated zucchini into the batter until evenly distributed. If you're using chocolate chips and/or nuts, fold them in at this stage as well.

            Pour into the pan: Transfer the batter into the prepared loaf pan, smoothing the top with a spatula to ensure even baking.
