1 ½ cups milk (dairy or non-dairy)

1 cup all-purpose flour

1 teaspoon baking powder

¾ cup brown sugar, packed

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

2 cups peeled and chopped apples (about 2 medium-sized apples)

½ cup chopped walnuts or pecans (optional)

Powdered sugar for dusting (optional)

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper.

    Soak Oats: In a medium bowl, combine the rolled oats and milk. Let them sit for about 15-20 minutes to soften.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

        Cream Butter and Sugar: In another bowl, use an electric mixer to cream the softened butter and brown sugar until light and fluffy (about 3-5 minutes).

          Add Eggs and Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until blended.

            Combine Ingredients: Gradually add the oat mixture to the butter mixture, stirring to combine. Then carefully incorporate the dry ingredients into the wet mixture until just combined.

              Fold in Apples and Nuts: Gently fold in the chopped apples and nuts (if using) until evenly distributed throughout the batter.

                Bake: Pour the batter into the prepared baking pan, spreading it out evenly. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

                  Cool: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
